Bluestem Co-op is an eating cooperative at Dancing Rabbit Ecovillage, the second eating cooperative to be formed at Dancing Rabbit. Our main focus is to be a family-sized cooperative that provides the necessary space, resources, and food to keep the members of the cooperative fed. We put a priority on local, organic, vegan food. In 2003 we built a 17' x 30' kitchen. To the west of the kitchen we have a fairly large garden in which we grow most of our own vegetable produce. As of spring 2004, we are expanding our garden goals to include some of our dietary grains and dried beans. Eventually we hope to expand the co-op to include services such as bathrooms, showers, and "hang-out" space for its members.
